Oscar – when people talk about the “benficio”, does the number of “pipes” refer to the volume of unfortified grape must, or to the volume of port after fortification with spirit?
Rob, always unfortified. Then the Port makers has to add the necessary spirit to fortify, depending on how sweet the grapes are and how sweet the Port shall be.
You can control how much water you add to a 100% alcohol spirit. You can’t control how muhc impurities are fermented ina 90% solution
You certainly know more about spirits than me…!
